Mocha Chip Pancakes

Ingredients
PANCAKES
1 C pancake mix (Really Great Foods)
1 C Almond Milk (So Delicious)
1 egg
1 tbsp liquid coconut oil (Nature's Way)
2 tbsp ground coffee (Highland's Summit)
1 tsp vanilla extract (Highland's Summit)
1⁄2 cup dairy free chocolate chips (Enjoy Life)
1 tbsp stevia or other sweetener (Stevia International - Mocha or Vanilla Flavor)
Add water to desired consistency
WHIPPED TOPPING
So Delicious CocoWHIP or
1 can full-fat coconut milk (Native Forest)
1 C pancake mix (Really Great Foods)
1 C Almond Milk (So Delicious)
1 egg
1 tbsp liquid coconut oil (Nature's Way)
2 tbsp ground coffee (Highland's Summit)
1 tsp vanilla extract (Highland's Summit)
1⁄2 cup dairy free chocolate chips (Enjoy Life)
1 tbsp stevia or other sweetener (Stevia International - Mocha or Vanilla Flavor)
Add water to desired consistency
WHIPPED TOPPING
So Delicious CocoWHIP or
1 can full-fat coconut milk (Native Forest)
Directions
PANCAKES
Combine all ingredients together with whisk, excluding chocolate chips. Once mixture is smooth and to desired consistency, stir in chocolate chips.
Heat a skillet to medium heat and spray with coconut oil spray (or melt dairy free butter). Pour mixture onto skillet.
WHIPPED TOPPING
Option 1: Place a dollop of So Delicious CocoWhip on pancakes and serve.
Option 2: Place can of coconut milk in fridge overnight. Take out of fridge and flip upside down. Remove liquid from top of can and place remaining hardened substance in a chilled bowl. Whip the cream with hand mixer, add the sweeteners and whip again. Scoop whipped topping from bowl and place on pancakes and serve.
